Dave Nibley loves grilled cheese…a lot. 

“There’s something about that simple combination of butter, cheese, bread and heat, “ he says. "It produces that special, melty thing that warmed you up as a kid and makes you smile as an adult. It’s something everybody loves. When I heard about this fledgling restaurant concept focusing almost completely on variations of grilled cheese, I was in.”

Dave invested in this new concept in 2012, and Melty was born. He soon moved into the CEO role, and over the years, together with his wife, Stephanie, he worked hard to improve and refine Melty’s menu. They succeeded in finding new, interesting takes on the grilled cheese, and have taken this childhood staple to new heights of deliciousness. From the buttery, melty Four Cheese Classic to creative bestsellers that go a little crazy (in a good way) like the Chicken Avocado, the Turkey Bacon, or the mouthwatering Jalapeño Popper. Melty’s ingredients are fresh and real, and when you combine these amazing melts with house-made dipping sauces, tasty soups, hand-tossed salads and delicious desserts, the combination can’t be beat. All this in a quick-start, low-cost franchise that appeals to the masses.
